Absolutely! Certain teas such as Matcha, select Senchas, Hojicha, Genmaicha, and Japanese black tea are well-suited for brewing with boiling water. Remember, tea brewing is highly personal. Feel free to adjust the brewing conditions based on your environment and preference. Our general guidelines serve as a starting point for you to discover your ideal cup.

Teas like Gyokuro, Kabusecha, and certain green teas, including Sencha and Fukamushi Sencha, are rich in umami components. Brewing these with boiling water can extract excessive bitterness, overshadowing the umami. We recommend cooling the water slightly after boiling before brewing for the most exquisite taste.

A simple rule of thumb is that water typically cools by approximately 10°C (50°F) with each vessel transfer. For example, boiling water cools to about 85-90°C (185 - 194°F) in a drinking cup and 75-80°C (167 - 176°F) in a teapot.

Use these guidelines:

Green tea: 2-3 grams per small spoonful, 4-5 grams per large spoonful.

Larger leaf teas like Hojicha: 1.5-2 grams per small spoonful, 3-4 grams per large spoonful.

For lower caffeine options, we recommend Hojicha and Genmaicha. They are not caffeine-free, so moderation depends on your sensitivity to caffeine.
