Edible Shincha — Fresh Tea You Can Eat
Starting in Japan's warmer regions, shincha—Japan’s first flush tea of the season—is harvested once a year.
Among them, the season for Uji Shincha arrives around the traditional “88th Night” (Hachijūhachi-ya), a time considered to offer the best balance of aroma and flavor.
“Edible Shincha” is a fragrant Uji tea made from tender new buds picked at their most flavorful moment.
These young leaves are finely cut to make them easy to enjoy while retaining their refreshing aroma and rich umami.
Perfect for adding color and flavor to dishes and sweets.
Key Nutrients Found in Tea
Tea leaves contain a variety of beneficial compounds such as:

When drinking brewed tea, only about 30% of these nutrients are consumed.
The remaining 70% stays in the used tea leaves (chagara), since even water-soluble components such as catechins are not fully extracted through normal brewing methods.
By eating tea leaves directly, you can enjoy the full spectrum of nutrients that would otherwise go to waste in discarded leaves.
Freshly picked tea buds are exceptionally tender, making them a perfect edible ingredient.
